Mullet is bountiful in Florida and during the mullet roe season, running from late November to February, we have a great amount of mullet roe in stock. Most of the mullet roe in Florida is exported to European and Asian countries but we keep our in house and only sell to our customers. Raw mullet roe can cured and made into bottarga. It can also be smoked and fried.
