Millbrook Estate Single Vineyard Chardonnay 2019 2020 MourvèdreThe fruit was sourced from the Talisman vineyard in the Geographe region and was hand picked in the cool of the night. The grapes were whole bunch pressed, without settling, directly to French barriques, 40% of which were new and 60% of which were one year old. The wine underwent wild fermentation and spent 8 months on lees. After fermentation, the barrels were topped and stirred only once before being lightly fined and bottled in December 2019. Pale
