We happily had it topped over bagel & cream cheese and once we ran out, decided to make it ourselves. Here we cook down a whole bunch of vegetables like eggplant, peppers, mushrooms etc with herbs, fennel, chillies and aromatics. This gets finished with vinegar, two types of olives, capers and extra
